The Perfect Carbonara

#fatmindforever #sorryehnotsorryatall #carbsaddictI’ve been trying to behave but honestly, this month has been the worst so far in terms of decent temperatures.At -20 or -30 I was only thinking in Car-bo-na-ra FTW!Here’s one of the best (so far) recipes I’ve done.

  • 4 to 5 slices of bacon or pancetta
  • Pecorino or Parmesan cheese (I added a lot, cuz I’m a cheese lover!)
  • 2 large eggs
  • Any kind of long pasta you wish to use (I used Fetuccini)
  • 1 tsp of garlic
  • butter 
  • 1/4 of spanish/yellow onion
  • Salt & pepper


It’s very easy! 

  1. Cook your pasta (boil water with salt) and cook it al dente 
  2. Mix the garlic, butter, onions and bacon until you see them crispy and golden 
  3. Mix the eggs with the cheese on a small bowl, add pepper 
  4. Add the cooked pasta in a big pan with the bacon and onions
  5. Pour the eggs and cheese, using a long fork lift up the fetuccini so it mixes quickly, you’ll see the pasta will thicken but doesn’t scramble.
