Feta Pepper Boats

Ingredients
  

  • 1/2 cup Feta
  • 1/2 cup Ricotta
  • 1/4 cup Greek-Style plain yogurt
  • 1 Clove of garlic, minced
  • 1 tsp Lemon zest
  • 1/2 tsp Fresh oregano
  • 2 tbsp Fresh mint, chopped
  • 2 Bell peppers, sliced into large strips
  • 1/4 cup Pitted kalamata olives, sliced
  • 1 tbsp Chopped fresh parsley

Instructions
 

  • In a bowl, mash Feta with a fork.
  • Add Ricotta, yogurt, garlic, lemon zest, oregano, mint and pepper.
  • Fill pepper strips with cheese mixture.
  • Garnish with olives and parsley. Serve cold.
