Mini Pancake Cereal!

Ingredients
  

DRY INGREDIENTS
  • 2 1/2 cups flour
  • 2 tsp salt
  • 3 tbsp sugar
  • 1 1/2 tsp baking powder
WET INGREDIENTS
  • 1 stick unsalted melter butter
  • 2 egg yolks
  • 2 1/2 cups buttermilk
  • 1 egg white (if needed)

Method
 

  1. Add all the dry ingredients and whisk until they’re combined
  2. Add all the dry ingredients and whisk until they’re combined
  3. Add the buttermilk mixture to the dry ingredients
  4. Gently, mix everything  using a rubber spatula, until it is combined (don’t overmix your batter!)
  5. The egg whites at the end are the secret that will guarantee the perfect fluffy pancakes, just add it if the mix is too thick.
  6. Set your pan on low/medium heat with Olive Oil
  7. Pour your mini pancake batter into a ziplock bag, cut the tip off and start making them until you see bubbles.
  8. Cook them for 20 seconds until they are golden brown
  9. Serve them and Enjoy!
