Brunch Favorites

We had a great homemade brunch this weekend! 
the winter menu was some delicious baked eggs in a cast iron skillet.it is a simple and quick recipe that will take you less than 30 minutes.Enjoy!

Ingredients- 6 eggs- lots and lots of bacon *yummmmm*-Feta cheese- Mozzarella cheese- 2 big potatoes (shredded)- Olive oil, salt, pepperSteps- Shred the potatoes, remove the water pressing them with a dish towel until they are dry- Heat your cast iron skillet with olive oil- add the potatoes and spread the potatoes as a big pancake- your potatoes are crispy and brown? you are ready!- add the eggs and sprinkle the remaining ingredients on top (cheeses and bacon – already baked)- Broil this in your oven for 10 minutes
