Maca’s Blender Crepes Recipe:
Ingredients
1 cup (150 g) unbleached all-purpose flour
2 ½ tbsp sugar
1 pinch salt
2 eggs
1 ½ cups (375 ml) milk
1 tbsp unsalted butter, melted
Softened butter, for cooking
Instructions
– In a blender, combine all the ingredients, starting with wet and followed by dry: flour, sugar, salt, eggs, milk, and melted butter.
– Blend until smooth and silky (about 15 to 30 seconds).
– Let the batter rest for 5 minutes (or overnight if prepping ahead).
– Heat a non-stick skillet over medium heat and lightly butter it.
– Pour a small ladle of batter into the pan, swirling it to coat evenly a thin amount to form your crepe.
– Cook for 1-2 minutes until the edges lift and the bottom is golden. Flip and cook another 30 seconds.
– Repeat, stack high, and serve with your favourite toppings!
