How the poke bowl trend started?
One of the most recognizable food trends is the colourful, flavourful and Hawaiian, poke bowl *POH-kay*. They crashed into New York City dining scene, bringing the next phenomenon in the fast-food industry a few years back.
Poke, is a deconstructed, flavorful version of sushi, often garnished with fresh ingredients as cucumbers, avocado, kiwi, over rice or green. You can have them with seafood (usually salmon, shrimp) or vegetarian and they are my favourite option when I’m on the go.
In Hawaii, you can pick it up at grocery stores or even gas stations (the dream). What I love the most about poke is that you can prepare it any time during the day in less than 20 minutes, hassle-free and the best comfort-food.

Never tried a poke bowl before? here are all the essentials you need to know to prepare or have one
step one: BASE
Rice (jasmine, white, brown, wild)
Greens (mix of lettuce, kale, spinach)
Grain free with spiralized zucchini or spaghetti squash
Quinoa or couscous
step two: PROTEIN
Tuna, salmon, tofu, portobello mushrooms, shrimps
step three: mix-ins
NERGI®, edamame, cucumbers, tomato cherry, green onions, sweet onions, pineapple, avocado, jalapeños, picked ginger, sesame seeds, wasabi peas, shaved radish, fried shallots
NERGI®, avocado, pineapple poke bowls
Ingredients
- 1 cup NERGI® (mini-kiwis)
- 1/2 cup short-grain rice (sushi rice)
- 1/3 cup soy sauce
- 2 tsp maple syrup
- 1/2 tbsp cane sugar
- 1 cubed avocado
- 1 pineapple
- 1/2 cup cherry tomatoes
- 1 tbsp sesame seeds
- edible flowers for garnish
- green onions for garnish
Instructions
- Cook the rice: this is your first step - use ½ cup of rice vinegar, 2 tbs of sugar and salt. Mix together in a small pot on medium heat, pour the mixture on rice and mix well. Let the rice cool down for a few minutes until it reaches room temperature.Cut the pineapple base: make your pineapple bowls by slicing it in half, scoop chunks out with a spoon. Chop the pineapple into smaller pieces to garnish if you want to top them.Prep the mix-ins: cut the NERGI® in half (you don't need to remove the skin), cut the avocados, cherry tomatoes. Create your bowl: add the rice base and top it with the NERGI®, avocados, tomatoes, green onions and edible flowers. Finish it by adding a splash of the soy sauce and maple syrup mix.
